What is it about the industry that keeps you motivated and focused?

Everyday brings a new challenge. the industry evolves on a daily basis and you must evolve with it, or lose customers to competition.

How many years were you in the business before you felt like you had made it?

To say that "we've made it" is to invite failure. We feel that one must constantly strive to do better to remain competitive.

Why do you think people enjoy dining in your restaurant?

Trattoria Fratelli serves great food, has outstanding service, fair prices, and a beautiful atmosphere. When people dine at Fratelli, the most often heard comment is "are we really in Lebanon?"

What do you feel are the positives, and what do you feel are the negative about the restaurant business?

Positives - creativity, the ability to have ideas, implement them and watch them grow is a very rewarding aspect of our profession. Negatives - the labor market. It's stressful, there's demanding situations on a daily basis, and the long hours.
